Kundalini Yoga for Temecula, Murrieta, and Lake Elsinore

Menudo, Vegan Style

2 T Olive Oil

2 onions

3-4 cloves of garlic chopped

1 quart of water

1 16oz can of Red Chili sauce

1 28 oz can of Mexican Homony (the mexican homony has more flavor)

1 19 oz can of Loma Linda Tender Bits (cut in quarters), 1" tofu squares, Gourmet Veat Bites as they are, or TVP strips

1 heaping teaspoon of Oregano Leaves (rubbed together between hands)

1 T flour dissolved into 1/2 cup of water


Saute onions & garlic, water, Red Chili sauce, Homony, meat substitute, oregano (rub between your hands when you put it in). Bring to a boil and turn down, cover and simmer for 20 minutes. Stir flour mixture in and bring back to a boil, turn down and cover for another 15-20 minutes, stirring every 5-10 minutes. Serve with fresh chopped cilantro & onion on top.
