Homemade Tapioca Pudding

3 cups milk (bst hormone free)

1/3 cup instant tapioca

1/3 cup unrefined organic sugar

1 teaspoon cardomon

1 teaspoon vanilla

1/2 cup nuts and/or raisins


Put milk, tapioca, sugar and cardomon in top of double boiler with 2-3 inches of water in the pan below. Heat should be about medium. Stir frequently until thick about 30 minutes. Add vanilla and nuts/raisins at the end and move to a large container or can be spooned out into small cups and placed in the refrigerator. Heat until warm before serving.


Note: You can create a double boiler by putting a small saucepan into a larger one so there is hot water boiling below it.
