Hot Apple Pie with a Pistachio Nut Crust, Green

Green Apple Pie
9-inch unbaked pie shell (see Pistachio Nut Crust recipe below)
6 oz can frozen unsweetened apple juice
3/4 tsp cinnamon
4 cups (or so) peeled apple slices, use the green baking apples
1 Tbsp cornstarch
2 Tbsp water
1-1/2 Tbsp ghee
Heat the apple juice concentrate and cinnamon. Add the apple slices and cook until partly tender. Remove the apple slices from juice.
Mix the cornstarch and water until smooth. Add to the juice and cook, stirring until thick.
Combine the apples and sauce; cool slightly.
Fill the unbaked pie crust.
Bake at 375° for 45 to 60 minutes or until nicely browned (Do not pre-bake crust as indicated below)
Pistachio Nut Crust, Green
2 cups ground pistachio nuts
3 tablespoons cold pressed safflower oil or ghee
1/4 cup agave, honey or maple syrup
Combine the ground nuts, oil and sugar.
Press the mixture evenly into the bottom and sides of a 9-inch pie plate.
Bake at 350°F for 10 to 12 minutes.
Cool and fill, as desired.
