Buckwheat Groats

2 t Olive Oil

1 Onion chopped

3 Cloves chopped garlic 

2 stalks of celery sliced

1 carrot sliced

Dash of salt & pepper

1 cup buckwheat groats

1 vegetarian boullion cube, or concentrated soup base

2 cups water or veggie broth

1 T Pine Nuts




In a non-stick sauce pan, heat oil and add vegetables, salt & pepper.  Cook, stirring, over medium heat about 5 minutes.  Stir in groats, add broth seasoning and water or veggie broth and bring to a boil.  Reduce heat, cover and cook 20 minutes until tender.  When liquid is absorbed, add pine nuts and fluff with a fork.  Garnish with parsley.
