Quinoa with Shitake Mushrooms (vegan)

Here's a great / simple recipe I got from my mom:

 

Ingredients:
1 cup quinoa (rinsed and drained)
Salt
Extra virgin olive oil
1 red bell pepper, diced
2-3 minced garlic cloves (I just used powder :)
1 tsp. dried basil
2 cups sliced shittake mushrooms, sliced*
1 small onion, diced
2 -3 fresh scallions (optional)

 

Place quinoa in a saucepan with 2 cups water and bring to a boil. Add a pinch of salt, cover, and reduce heat. Cook about 25 minutes or until all liquid is absorbed and quinoa "opens up".

While quinoa cooks, place small amount of oil, garlic, onion, and red pepper in a skillet and turn heat to medium. When peppers begin to sizzle, add a pinch of salt and basil, and saute for 1 or 2 minutes. Stir in mushrooms and saute another 2 minutes. Reduce heat to low.

When quinoa is cooked, stir in the mushroom mixture. Garnish with scallions if desired.

*The recipe called for 1 cup Shittake and 1 cup white button mushrooms. I really liked it with all shittake. Try whatever combo of mushroom you like.
