Yogic Pumpkin Cookies

After these were baked and on the table, my 18 year old son said something smells good, you made some yummy cookies.  I told him these cookies have some bizarre ingredients.  He ate one anyway and liked it, which kind of surprised me.  Then I took the batch to a yoga event and people there flipped out about them, well maybe I'm exaggerating a little, but they seemed to really like them too.


Servings: 36 Cookies


1/2 cup yellow D brown sugar (unrefined brown sugar)
1/2 cup molasses

1 cup fructose sugar or organic unrefined sugar
3/4 cup ghee or butter

2 Tablespoons of ground flax seeds mixed with 1/4 cup of water (to replace eggs) - golden flaxseed powder is nice, but any will work.

2 teaspoons vanilla extract
2 cups pumpkin or (1) 15oz can
2 teaspoons cinnamon
2 teaspoons allspice or pumpkin spice
1 level teaspoon of turmeric
1/2 teaspoon cardamon
1 teaspoon baking soda
1 teaspoon baking powder
3 1/2 cups unbleached flour
1 teaspoon salt

Below was a combination of dried fruit & nuts on hand in my cupboard - your combination might be different, you could also add 1 T of raw chopped ginger :

1/2 cup chopped jalapenos deseeded

2 Tablespoons dried cranberries

2 Tablespoons crystallized dry ginger chopped

1/2 cup pepitas (pumpkins seeds)

1/2 cup pecans chopped

1/2 cup golden raisins
1/2 cup carob or chocolate chips




Prep Time: 15 mins


Total Time: 30 mins


   1. Cream together sugars, molasses, ghee or butter, vanilla, flax seed eggreplacer, pumpkin & spices.

   2. Stir in flour, baking soda, baking powder and salt until mixed together, then add jalapenos, nuts, dried fruit and carob or chocolate chips.

   3. Bake at 350 degrees for approx 10-13 minutes, after 10 minutes use the toothpick test to see if cookies are done.
