Apple Almond Brown Rice Stuffing



• 1 medium red apple, pear or persimmon, cored and diced
• 1/2 cup chopped onion
• 1/2 cup sliced celery
• 1/3 cup seedless raisins
• 1/2 teaspoon poultry seasoning
• 1/4 teaspoon dried thyme leaves
• 1/4 teaspoon ground black pepper
• 2 teaspoons Earth Balance buttery spread or ghee or butter or olive oil
• 3 cups cooked brown rice (cooked in apple juice and 1/2 cup almond meal)
• 1/3 cup slivered almonds, toasted
• 1/4 cup apple juice
• 4-6 vegetarian sausage links, browned and sliced (Boca, Morning Star, Lightlife, Tofurky.... are some of the brand names)




Cook apple, onion, celery, raisins, poultry seasoning, thyme and pepper in buttery spread, ghee or butter in large skillet until vegetables are tender crisp.
Stir in rice, almonds, apple juice and optional sausage slices.
Use as stuffing for squash or tofu turkey.
Serve as a side dish, cook until thoroughly heated.
